Ingredients:

  • ½ cup vegetable stock
  • ½ cup coconut milk
  • 1 tbsp tomato paste
  • ½ tsp coriander
  • ¼ tsp cumin
  • ¼ tsp ground ginger
  • ¼ tsp turmeric powder
  • 2 cups Nature’s Path Golden Turmeric Superfood Oatmeal
  • Sea Salt & Black Pepper
  • ⅓ cup canned chickpeas (drained)
  • 3 tbsp diced red pepper
  • A scoop of coconut yogurt
  • A few leaves of cilantro, chopped

Directions:

  1. In a small saucepan, whisk together the stock, coconut milk, tomato paste and spices until gently bubbling. Remove from heat.
  2. Pour oatmeal cups into a bowl and stir in vegetable stock/coconut milk mix. Season to taste with salt & pepper. Set aside for 2 minutes.
  3. Heap the chickpeas on top of the oatmeal, followed by the red pepper.
  4. Add a scoop of coconut yogurt and sprinkle chopped cilantro leaves over the oatmeal.
