Vegan Hemp Hearts Granola and Pecan Sweet Potato Hash

Vegan Sweet Potato Hash with crunchy Hemp Hearts Granola and Pecans. One pan and a great option for a vegan breakfast or side dish.

  • 1 lbs. sweet potatoes, cut into ¼-½″ cubes (approx. 2 medium-large)
  • 4 tsp. coconut oil, divided
  • 1 pinch kosher salt
  • 1 tbsp. maple syrup
  • ½ cup whole pecans
  • ¾ cup Hemp Hearts Granola


  1. Toss sweet potato pieces with 3 tsp of coconut oil, salt, and maple syrup.
  2. In a medium size (oven-proof) skillet, cook sweet potatoes over med-high heat for 20-25 minute, stirring every few minutes until sweet potatoes are soft and starting to brown. Remove from heat.
  3. Meanwhile, in a small bowl, mix together Hemp Hearts Granola, pecans, and 1 tsp coconut oil.
  4. Preheat broil to low and top sweet potatoes with Hemp Hearts Granola mixture. Broil skillet for 3-4 minutes or until granola and pecans are toasted and golden brown.
