Vegan Ceviche

Ingredients:

  • 1 can heart of palm chopped
  • 1 pepper (orange or red), diced
  • 1 tomato, diced
  • ¼ cup red onion, diced
  • 1 jalapeño, minced
  • 1 garlic clove, minced
  • 6 limes, juiced
  • 2 tbsp cilantro, minced
  • 1 tbsp salt
  • 1 bag Que Pasa Salted Tortilla Chips

Directions:

  1. Place heart of palm, pepper, tomato, red onion, jalapeño, and garlic in a bowl.
  2. Add the lime juice and let sit 10-15 minutes.
  3. Add salt and cilantro to taste.
  4. Serve in elegant martini glasses alongside Que Pasa Salted Tortilla Chips.
