Vegan Ceviche

1 can heart of palm chopped

1 pepper (orange or red), diced

1 tomato, diced

¼ cup red onion, diced

1 jalapeño, minced

1 garlic clove, minced

6 limes, juiced

2 tbsp cilantro, minced

1 tbsp salt

1 bag Que Pasa Salted Tortilla Chips


Place heart of palm, pepper, tomato, red onion, jalapeño, and garlic in a bowl.

Add the lime juice and let sit 10-15 minutes.

Add salt and cilantro to taste.

Serve in elegant martini glasses alongside Que Pasa Salted Tortilla Chips.
