Make breakfast fun and decadent for the kids with these easy vegan breakfast banana split parfaits! Made with bananas, dairy-free vanilla yogurt, lightly sweetened strawberries, pineapple, homemade vegan chocolate syrup, and Envirokidz Amazon Flakes for crunch.
Ingredients
2 cups (500ml) vanilla dairy-free yogurt
1 banana, halved lengthwise
¾ cup (175ml) chopped strawberries (approx. 4-5 strawberries)
½ tbsp (7.5ml) cane sugar
¾ cup (175ml) chopped pineapple (approx. ⅛ pineapple)
Mix strawberries and cane sugar together. Set aside.
Mix together melted coconut oil, maple syrup, and cocoa. Set aside.
Cut halved bananas in half again.
Spoon 1 cup of vanilla dairy-free yogurt into a bowl. Place 2 pieces of banana on opposite sides of the bowl. Top with chopped pineapple, chopped sweetened strawberries, chocolate syrup, and Amazon Flakes.
