Vegan Breakfast Banana Split Parfaits

Make breakfast fun and decadent for the kids with these easy vegan breakfast banana split parfaits! Made with bananas, dairy-free vanilla yogurt, lightly sweetened strawberries, pineapple, homemade vegan chocolate syrup, and Envirokidz Amazon Flakes for crunch.

Ingredients:

  • 2 cups (500ml) vanilla dairy-free yogurt
  • 1 banana, halved lengthwise
  • ¾ cup (175ml) chopped strawberries (approx. 4-5 strawberries)
  • ½ tbsp (7 ½ml) cane sugar
  • ¾ cup (175ml) chopped pineapple (approx. ⅛ pineapple)
  • ¼ cup (60ml) chocolate syrup
    • 2 tbsp (30ml) melted coconut oil
    • 1 ½ tbsp (37 ½ml) maple syrup
    • 1 tbsp (15ml) cocoa
  • ¾ cup Envirokidz Amazon Flakes

Directions:

  1. Mix strawberries and cane sugar together. Set aside.
  2. Mix together melted coconut oil, maple syrup, and cocoa. Set aside.
  3. Cut halved bananas in half again.
  4. Spoon 1 cup of vanilla dairy-free yogurt into a bowl. Place 2 pieces of banana on opposite sides of the bowl. Top with chopped pineapple, chopped sweetened strawberries, chocolate syrup, and Amazon Flakes.
