Vegan “Bacon” Avocado Toast

It’s so easy to make this crazy delicious Vegan “Bacon” Avocado Toast, to brighten up any morning or afternoon.

  • Approx. 2 cups of Vegan "Bacon"
  • 5 mins prep, 25 mins cook 30 mins total

Ingredients:

  • 2 cups unsweetened coconut flakes (not shredded)
  • 2 tbsp coconut aminos (or low sodium soy sauce)
  • 3 tsp maple syrup
  • 1 ripe avocado
  • 2 pieces of bread, toasted
  • 1 pinch crushed red pepper flakes, optional
  • 1 tbsp hemp hearts or Hemp Hearts Granola, optional

Directions:

  1. Preheat oven to 325° F and line a baking sheet with non-stick paper.
  2. Toss coconut flakes, coconut aminos, and maple syrup together.
  3. Spread evenly in one layer on baking tray and bake for 25-30 minutes or until coconut flakes are a dark golden brown.
  4. Meanwhile mash avocado with a fork.
  5. Top toasted bread with avocado, coconut “bacon,” red pepper flakes, and hemp hearts (if using).
  6. Coconut “bacon” can be stored in an airtight container for up to 3 months in the refrigerator.
