Strawberry-Rhubarb Chia Pudding Parfaits

Tangy rhubarb and sweet strawberries make this healthy parfait a delicious way to start your day.

Ingredients:

Chia Pudding:

  • 1 cup almond milk
  • 1 cup plain 2% Greek yogurt
  • ½ cup chia seeds
  • 1 tbsp maple syrup
  • 1 tsp vanilla

Strawberry-Rhubarb Compote:

  • 1 ½ cups quartered strawberries
  • 1 ½ cups sliced rhubarb
  • ⅓ cup granulated sugar
  • ½ tsp finely grated lemon zest
  • 2 tbsp lemon juice
  • 4 tsp cornstarch
  • 1 cinnamon stick (about 2 inches)

Directions:

Chia Pudding:

  1. Whisk together almond milk, yogurt, chia seeds, maple syrup and vanilla.
  2. Cover and refrigerate for 8 hours or overnight.

Strawberry-Rhubarb Compote:

  1. In saucepan set over medium-high heat, combine strawberries, rhubarb, sugar, lemon zest, lemon juice, cornstarch and cinnamon stick.
  2. Cook, stirring occasionally, for 8 to 10 minutes or until sugar dissolves, rhubarb is tender and juices thicken.
  3. Let cool completely; remove cinnamon stick.
  4. In 4 parfait glasses, layer half of the compote, Chia Pudding and granola; repeat layers.

Tip: If you can’t find fresh rhubarb, use frozen rhubarb.
