Ingredients:

Lemon Vinaigrette

  • ¼ cup olive oil
  • 3 tbsp lemon juice
  • 1 tsp honey
  • 1 tsp grainy mustard
  • 1 tsp finely grated lemon zest
  • 1 clove garlic, minced
  • ½ tsp salt
  • ¼ tsp freshly ground pepper

Directions:

Salad

  1. Add spinach, mango, avocado and blueberries to a large bowl.
  2. Toss with lemon vinaigrette.
  3. Stir in granola and feta. Serve immediately.
