Red Berry Love Crunch Vegan Chocolate Truffle Fruit Skewers

These easy 5-ingredient Red Berry Love Crunch Granola Chocolate Truffle Fruit Skewers are perfect for Mother’s Day or any time a craving for something sweet treat arises.

  1. Gently heat coconut milk (ensure it’s very well shaken, if the coconut milk is still separated whisk to blend the cream with the milk portion) in a small pot over low heat until just starting to simmer.
  2. Pour heated coconut milk over 1 cup of vegan chocolate chips. Set aside for 5 minutes and then stir to combine. If chips are not melted place in microwave for short bursts (15-20 seconds) until completely melted. Refrigerate for at least 3 hours or overnight.
  3. Scoop chocolate mixture, using a tablespoon, and roll into a ball. Roll in crushed Red Berry Love Crunch Granola and return to fridge while preparing the remaining truffles.
  4. Melt remaining 1/4 cup of chocolate in short bursts in the microwave.
  5. Carefully pierce 2 raspberries, one strawberry, and one truffle with a medium size toothpick while adding a dollop of melted chocolate between each piece of fruit and truffle. Return to fridge for 10 minutes or until set.
