Rainbow Parfait

Sweet and tart layers come together in a playful medley of coconut cream, punctuated by chocolatey granola. This parfait is a must-try for a truly refreshing treat!

Ingredients:

  • 1 can full-fat coconut milk
  •  ¼ cup icing sugar
  •  1 dragon fruit
  •  1 papaya
  •  1 mango
  •  1 kiwi
  •  1 pomegranate
  •  ½ cup blueberries
  •  ½ cup blackberries
  •  1 bag Love Crunch Red Berries Granola

Directions:

  1. Place coconut cream (not water) in a stand-up mixer fitted with whisk attachment. Lightly whip with icing sugar.
  2. Cut the dragon fruit, papaya, mango, and kiwi, placing different fruit into individual bowls.
  3. Take a parfait glass and add a layer of coconut cream, followed by a layer of Love Crunch Red Berries Granola.
  4. Follow up with a layer of dragon fruit, then blackberries, blueberries, kiwi, mango, papaya, and pomegranate.
  5. Chill till ready to serve.
