Ingredients:

  • 4 large ripe tomatoes, diced
  • 1 cucumber, peeled and diced
  • ½ cup diced red pepper
  • ½ cup diced green pepper
  • ¼ cup diced red onion
  • ¼ cup olive oil
  • 2 cloves garlic
  • 1 tbsp sherry vinegar
  • ½ tsp black pepper
  • ½ tsp salt
  • ½ tsp cumin
  • ½ tsp oregano

Directions:

  1. In a large mixing bowl, toss all ingredients together until the vegetables are well coated.
  2. Transfer mixture into a blender and puree until smooth.
  3. Cover and place in the fridge to chill for an hour to allow for a more developed flavour.
  4. To serve: ladle into bowls and top with olive oil drizzle, cucumber ribbons, fresh chopped cilantro, salt & pepper.
