Pumpkin Flax Energy Bowl

Transform your meal-time into an energy-boosting bowl of delicious with this dish containing quinoa, sunflower sprouts, roasted vegetables and Flax Plus Pumpkin Raisin Crunch cereal. Add a little lime zest for a little extra zip!

Ingredients:

Roasted Vegetables

  • 2 carrots, peeled and chopped
  • 2 parsnips, peeled and chopped
  • 4 cups chopped butternut squash
  • 2 tbsp melted coconut oil
  • 2 cloves garlic, minced
  • 2 tsp minced ginger
  • 1 tsp chili powder
  • 1 tsp brown sugar
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ¼ tsp ground cinnamon
  • ¼ tsp ground allspice
  • ¼ tsp each salt and pepper

Directions:

Roasted Vegetables

  1. Preheat oven to 400°F.
  2. Toss carrots, parsnips and squash with coconut oil, garlic, ginger, chili powder, brown sugar, cumin, coriander, cinnamon, allspice, salt and pepper.
  3. Transfer to a baking sheet lined with parchment paper.
  4. Bake, turning occasionally, for 30 to 40 minutes or until golden brown and tender.

Energy Bowl

  1. Divide quinoa between 4 bowls.
  2. Arrange roasted vegetables, sunflower sprouts, cereal and avocado slices on top.
  3. Serve with a dollop of yogurt, if desired and lime wedges.
