Pumpkin and Chickpea Fritters

Your love for pumpkin doesn’t have to stop after Halloween. Fritter away your day with the warming spices of cumin, cayenne, and cinnamon combined with hearty chickpeas and pumpkin puree. Serve with refreshing tzatziki or plain yogurt.

  1. Add cereal flakes to a food processor and finely crush.
  2. Transfer to a bowl.
  3. Add onion and garlic until finely ground.
  4. Add chickpeas, pumpkin purée, parsley, lemon juice, cumin, coriander, baking powder, salt, pepper, allspice and nutmeg; pulse until in finely ground.
  5. Add finely crushed flakes; pulse until combined.
  6. Stir in pumpkin seeds and Qi’a cereal.
  7. Preheat oven to 425˚F.
  8. Line a baking sheet with parchment paper.
  9. Spray lightly with cooking spray.
  10. Using a tablespoon, scoop mixture into balls and place on prepared pan, spacing 2-inches apart.
  11. Flatten slightly.
  12. Spray tops with cooking spray.
  13. Bake for 18 to 20 minutes, turning once, or until golden and set.

Tip: Serve fritters with yogurt and tzatziki, if desired.
