Maple syrup and/or additional berries for serving.
Directions:
Mix oatmeal, flour, baking powder, and salt together in a large bowl. Add milk, applesauce, and vanilla (if using). Mix until just blended, some small lumps are fine. Gently mix in blueberries.
Heat coconut oil in a skillet or a frying pan over medium heat. Add pancake mixture by 1/4 cup and cook for 3-5 minutes per side, or until pancakes are nicely browned and cooked through.
To make crumble, mix oatmeal and oil together. Bake at 425° F for 10-15 minutes, or until golden brown.
To serve, stack pancakes and top with crumble, additional berries, and maple syrup.
