2 cups roughly chopped dates, approximately 12 pitted mejdool dates
½ cup nut or seed butter
½ cup puffed quinoa (OR another package of Apple Cinnamon Oatmeal and 2 tbsp. chia seeds)
Directions:
Place dates and nut/seed butter into a blender and mix until dates are coarsely chopped and nut/seed butter is mixed through. Transfer to a large bowl.
Add oatmeal and puffed quinoa to bowl and combine all ingredients with hands until well blended.
Butter or spray an 8″ x 8″ pan and press mixture into it. Using a flat object (such as a measuring cup) press mixture firmly into pan. Set aside for at least 1 hour to firm.
Cut into bars.
Bars will keep in an airtight container on the counter for up to 1 week.
