Comfort food at its finest! A warming, saucy & nutritious take on a family favorite that everyone is sure to love.

Ingredients

Sloppy Joe Sauce:

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 onion, finely chopped
  • 1 cup lentils
  • 2 cups mushrooms, chopped
  • 1 tbsp vegan Worcestershire sauce
  • 1 red pepper, chopped
  • 2 cloves garlic, minced
  • 1 jar Que Pasa Mexicana Salsa - Medium
  • 3/4 cup water

ROASTED YAMS:

  • 2 tbsp olive oil
  • ½ green onion, chopped
  • 2 medium yams, sliced in half lengthwise

Directions

  1. Preheat oven to 425ºF and line a baking sheet with parchment paper. Brush each yam with olive oil & sprinkle with a pinch of salt and pepper. Place in oven and bake for 40 minutes, or until the yams are tender when poked with a fork.
  2. In a medium saucepan, sauté onion and garlic until translucent, about 5 minutes. Add mushrooms and red pepper & sauté until soft, about 5-6 more minutes. Add the salsa, lentils & remaining spices and bring to a low boil. Cover and allow to simmer for 20-25 minutes, or until lentils are cooked, adding more water if necessary.
  3. Remove yams from oven and allow to cool for a few minutes. Fluff up the yam with a fork and scoop lentil sloppy joe sauce over yams. Top with green onions & serve hot.
