Jungle Munch French Toast Bake

For those cold weekend mornings, warm up with some cinnamon-y, fruit-y french toast. This delightful take on a classic is perfect for sharing with the whole family.

  • 2 tbsp vegan butter
  • ⅔ cup brown sugar, divided
  • 2 apples, peeled, cored and chopped
  • ½ cup dried cranberries
  • 8 slices gluten-free bread, cut in half on diagonal
  • 1 cup unsweetened almond milk
  • 2 tsp powdered egg replacement
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • ¾ cup EnviroKidz Jungle Munch Cereal


  1. Preheat oven to 375°F.
  2. In a medium skillet set over medium heat, melt vegan butter and 1/3 cup brown sugar.
  3. Add apples and cranberries.
  4. Sauté for 10 to 15 minutes or until apples are golden brown and tender.
  5. Set aside.
  6. Arrange bread slices in 9×13-inch baking dish.
  7. In large bowl, whisk together almond milk, egg replacement, remaining sugar, cinnamon and vanilla.
  8. Pour over bread, pressing lightly so that bread absorbs all the mixture.
  9. Sprinkle with cereal and sautéed apples mixture.
  10. Bake for 45 to 50 minutes or until tester comes out clean when inserted in centre.
  11. Serve with maple syrup.
