Granola Broccoli Bake

Hemp Hearts Granola adds the perfect crunchy topping for this cheesy broccoli dish. Serve alongside some grilled veggies, or as an appetizer for your guests.

Ingredients:

  • 6 cups broccoli florets (2 stalks broccoli)
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup shredded Cheddar cheese
  • 2 tbsp grated Parmesan cheese
  • ½ cup Nature’s Path Hemp Hearts Granola
  • 2 tbsp butter, melted
  • 1 tbsp finely chopped fresh chives
  • ¼ tsp each salt, pepper and garlic powder
  • Pinch cayenne pepper

Directions:

  1. Preheat oven to 400˚F. In large pot of boiling salted water, cook broccoli for about 3 minutes or until tender-crisp.
  2. Drain well.
  3. Meanwhile, heat oil in skillet set over medium heat; cook onion and garlic for 3 to 5 minutes or until softened.
  4. Toss with broccoli.
  5. Transfer to 8-inch square baking dish.
  6. Sprinkle evenly with Cheddar and Parmesan.
  7. Toss together granola, butter, chives, salt, pepper, garlic powder and cayenne; sprinkle evenly over top.
  8. Bake for 15 to 17 minutes or until cheese melts and topping is golden.

Tip: Use mild, medium or aged Cheddar cheese.
