Fattoush Salad

This is a twist on a classic Middle Eastern salad. Tangy za’atar spice baked with Flax Plus Flakes gives this refreshing salad extra crunch.

  • Serves 6 to 8 servings
  • 20 mins prep, 10 mins cook 30 mins total

Ingredients:

  • 1 ½ cups Nature’s Path Flax Multibran Flakes
  • 1 tbsp olive oil
  • 2 tsp za’atar spice
  • ¼ tsp salt
  • 1 head romaine lettuce, coarsely chopped
  • 3 tomatoes, chopped
  • 1 English cucumber, chopped
  • ½ cup sliced radish
  • ½ cup chopped fresh parsley
  • ¼ cup chopped fresh mint
  • 1 cup crumbled feta cheese

Lemon-Garlic Vinaigrette:

  • ¼ cup lemon juice
  • ¼ cup extra-virgin olive oil
  • 2 tsp honey
  • 1 clove garlic, minced
  • Pinch each salt and pepper

Directions:

  1. Preheat oven to 350°F.
  2. Toss together cereal, olive oil, za’atar and salt.
  3. Transfer to parchment paper–lined baking sheet; bake for 8 to 10 minutes or until mixture is fragrant and crisp.
  4. Let cool completely.

Lemon-Garlic Vinaigrette:

  1. Whisk together lemon juice, olive oil, honey, garlic, salt and pepper.
  2. In large bowl, combine romaine, tomatoes, cucumber, radish, parsley and mint; toss with vinaigrette.
  3. Sprinkle with cereal mixture and feta cheese.
