Crunchy Apple Pie Fruit Parfait

Who says apple pie is only for dessert? Layered with spiced Greek yogurt and granola, this apple pie parfait put a crunchy twist on a traditional Thanksgiving favorite.

Ingredients:

  • 1 ½ cups plain fat free Greek yogurt
  • 2 tbsp honey
  • 1 tsp vanilla
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tbsp butter
  • 3 apples, peeled and chopped
  • 2 tbsp brown sugar
  • 1 cup Pumpkin Seed + Flax Granola

Directions:

  1. Stir yogurt with honey, vanilla, cinnamon and nutmeg; set aside.
  2. Melt butter in a small heavy-bottomed saucepan set over medium heat.
  3. Add apples and brown sugar.
  4. Cook, stirring often, for 5 to 7 minutes or tender and golden.
  5. Layer evenly in 4 parfait glasses: apple, yogurt mixture, granola, repeating layers twice.
