Coconut Smoothie Bowl with Love Crunch Macaroon Granola

Foodie Erin Ireland created this Coconut Smoothie Bowl with frozen bananas, cinnamon, coconut milk and topped with Love Crunch granola and dragon fruit. Who will you share the second bowl with?

  • Serves 2 bowls

Ingredients:

Smoothie bowl:

  • 2 Frozen bananas (broken into chunks)
  • 1 Heaping cup frozen coconut meat (cut into chunks)
  • 3 Dates
  • ½ c. Coconut milk
  • 3 tbsp Hemp hearts
  • ½ tsp Cinnamon
  • ¾ tsp. Himalayan salt

Smoothie bowl toppings:

  • 1 c. Nature’s Path Love Crunch Dark Chocolate Macaroon Granola
  • 1 banana (sliced)
  • ½ Dragon Fruit
  • 2 dates
  • Pinch cinnamon

Directions:

  1. Add all smoothie bowl ingredients to a high-powered blender and, with your tamper tool, continuously and aggressively stir until your mixture until it takes on the texture of ice cream.
  2. Add more coconut milk or water if you prefer a thinner smoothie bowl (which is easier to blend).
  3. Transfer smoothie to two bowls.
  4. Using a 1/4 teaspoon (or small spoon), prepare little scooped balls of dragon fruit flesh (for the garnish) and add to
  5. smoothie bowls along with remaining toppings.
