Chocolate Covered Kamut and Almond Butter Dates

These decadent dark chocolate-covered dates are filled with a delightful combination of creamy almond butter and crispy Kamut Puffs to form a deliciously healthy vegan dessert.

Ingredients:

  • 12 medjool dates, pitted and gently opened
  • ¼ cup almond butter
  • ¼ cup Kamut Puffs
  • 1 cup (200g) chopped dark chocolate
  • Sea salt, for topping

Directions:

  1. Melt dark chocolate in a double boiler over medium heat.
  2. Arrange dates on a piece of parchment paper.
  3. Divide Kamut Puffs between 12 opened dates. Fill each date with 1 tsp almond butter.
  4. Gently close dates without squishing out almond butter.
  5. Dip filled dates in melted chocolate and lay them on a piece of parchment paper.
  6. Top the chocolate-covered dates with a sprinkle of sea salt and chill in refrigerator.
