Buttercup Sandwich Cookies

Delicate and sweet (like a buttercup), these cookies are made using our delicious and nutritious Gorilla Munch cereal!

  • 1 cup Vegan Butter softened
  • ½ cup Icing Sugar
  • 1 tsp Vanilla
  • 2 tsp water
  • 1 cup ground EnviroKidz Gorilla Munch Cereal
  • 1 cup Almond Flour
  • 1 cup Corn Starch
  • *Apricot Jam 


Preheat Oven to 350° F degrees 

In a food processor, add the Gorilla Munch cereal and blend until it forms a fine dust. Make sure that there is enough ground cereal to make up a one-cup measurement. 

In a large bowl, mix the butter and sugar together with your hands until it is fully combined. Add the vanilla and water to the bowl and mix until fully incorporated. 

In a separate bowl, sift the flour, corn starch, and Envirokidz Gorilla Munch Cereal. Add the dry ingredients to the butter mixture and incorporate it with your hands. (Add more water 1 tsp at a time if needed). 

Once dough is formed, shape it into a disk, wrap, and place in the fridge for 15 minutes to set up.  

Remove dough from fridge and roll it out to ¼ inch thick. Cut out all the dough using a flower-shaped cookie cutter. On half of the cookies, cut out a circle using the back of an icing tip. 

Place on a lined baking sheet and bake for 10-15 minutes.  

Remove from oven and allow them to cool on a wire rack. Once cooled, match the cookies with a bottom and a top piece. Place a teaspoon of apricot jam in the center of the bottom cookie and place the second cookie on top.  (*feel free to use whatever jam flavour you like)

Dust with more icing sugar and Enjoy.
