Blueberry & Cashew Butter Breakfast Crostini

Thick and creamy cashew butter is delicious anywhere you’d usually use peanut or almond butter! We spread this mild nut butter over some Blueberry & Chia Sunrise Breakfast Biscuits and added a spoonful of warm blueberries, a drizzle of maple syrup, and a sprinkle of granola for a healthy and decadent breakfast crostini.

Ingredients:

Cashew Butter

  • 2 cups raw cashews
  • Pinch sea salt

Directions:

Cashew Butter

  1. For the cashew butter: Add raw cashews to a food processor or high-speed blender and process/blend on high, scraping down the sides to redistribute the mixture as needed, until the nut butter is completely smooth. Store in refrigerator.

  1. Spread Sunrise Breakfast Biscuits with cashew butter and top with a spoonful of warm blueberries, a drizzle of maple syrup, and a sprinkle of granola.
