Banana Chocolate Chip Sheet Pan Pancakes

Pancakes are pretty-time consuming to make, which is why they’re usually reserved for weekends. These easy sheet pan pancakes make a whole batch at once, and they’re absolutely delicious!

  • 6-8 servings

  • 3 packages Brown Sugar Maple Oatmeal
  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • Pinch of salt
  • 2 medium ripe bananas
  • 1 cup milk or milk alternative
  • 1 tbsp vegetable oil (such as coconut)
  • ⅔ cup mini chocolate chips

  1. Preheat oven to 425° F and line a 9″ x 13″ sheet pan with foil or non-stick paper.
  2. In a medium bowl, mash bananas with a fork. Mix with milk and vegetable oil. Add oatmeal, flour, baking powder, and salt. Mix until mostly combined (a few lumps is fine). Mix in 1/2 cup mini chocolate chips.
  3. Pour batter into prepared sheet pan and smooth until an even layer is created. Sprinkle with remaining chocolate chips.
  4. Bake for 10-15 minutes and until pancakes start to pull away from the sides of the pan and begin to brown.
  5. Broil for 2-3 minutes on low to create more of a golden top (sheet pan pancakes generally won’t brown as much as regular ones).
  6. Serve with syrup if desired.
