Avocado Toast with Hemp Plus “Bacon”

You’ll never want plain toast for breakfast again once you’ve tried this creamy avocado toast topped with addictively crunchy “bacon.”

  • 10 mins prep, 10 mins cook 20 mins total

Ingredients:

Pumpkin-Flax “Bacon”:

  • 1 cup Nature’s Path Hemp Hearts Granola
  • 1 tbsp olive oil
  • 1 tbsp brown sugar
  • ½ tsp ancho chili powder or smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder

Avocado Toast:

  • 2 avocados, peeled and pitted
  • 1 tbsp fresh lime juice
  • ¼ tsp each salt and pepper
  • 4 slices whole wheat bread, toasted
  • 12 heirloom cherry tomatoes, halved

Directions:

Hemp Plus “Bacon”

  1. Preheat oven to 350°F. Toss together granola, olive oil, brown sugar, chili powder, garlic powder and onion powder.
  2. Transfer to parchment paper–lined baking sheet; bake for 10 to 12 minutes or until mixture is fragrant and golden.
  3. Let cool completely.

Avocado Toast:

  1. Mash together avocados, lime juice, salt and pepper; spread evenly over toast and top with tomato halves.
  2. Sprinkle 2 tbsp Pumpkin-Flax “Bacon” over each toast.
  3. Sprinkle over salads and soups if desired

Tip: Store remaining Pumpkin-Flax “Bacon” in an airtight container for up to 7 days.
