Vegan Rice Crispy Squares

Everybody’s favourite snack!! This vegan version tastes identical to the classic rice crispy snack you used to enjoy as a kid! Gooey, crunchy & wonderfully sweet this plant-based treat will have you coming back for seconds!

  1. Grease a 9×9 baking tray and set aside.
  2. In a soup pot, over medium heat, melt the butter.
  3. Add in marshmallows and gently stir until they are completely melted. This takes about 5-7 minutes and it is important to consistently stir so it doesn’t burn. Once you have a melted mixture, add in vanilla and maple syrup.
  4. One cup at a time add puffed rice and stir until evenly coated.
  5. Pour into greased pan and use a spatula or your hands to press the mixture firmly into the mold.
  6. Allow to cool, cut into squares & enjoy. Store in an airtight container for up to 5 days.
