In a stand mixer or bowl, combine oatmeal, flax seeds, almond flour, cocoa powder and salt. In a small bowl, combine the maple syrup and nut butter. Pour maple syrup mixture over the oatmeal mixture and mix until combined. Add pumpkin seeds and mix again.
Form into wolverine claw shape and add the coconut chips to make ‘claws’. Place them on a wax paper-lined cookie sheet and refrigerate for an hour. At this point you can eat them, or refrigerate for up to 3 days.
