Steel Cut Oat Pancakes

  1. Whisk together oats, soymilk, ground flax, and maple syrup. Set aside for 5 minutes. Whisk in flour and baking powder.
  2. Preheat a pan over medium heat. Add a small amount of oil to the hot pan before cooking batter in ¼ cup spoonfuls. Cook for 1 ½ – 2 minutes, flip once the center begins to bubble and the edges look cooked. Flip and cook for another 1 ½ – 2 minutes or until golden-brown on both sides.
