Peanut Butter Swirl Fudgsicles

What if we told you we recreated (and improved) the classic Fudgsicle you once loved and into a dairy-free, plant-based version? We also added a beautiful, creamy peanut butter swirl for good measure!

Ingredients:

  • 1 cup full-fat coconut milk
  • ½ cup cocoa powder
  • ⅓ cup pure maple syrup
  • 2 tbsp + ⅓ cup natural peanut butter
  • ½ tsp pure vanilla extract
  • ¼ cup Nature’s Path Peanut Butter Granola
  • Popsicle sticks
  • Popsicle molds

Directions:

  1. In a blender, combine the coconut milk, cocoa powder, maple syrup, 2 tablespoons peanut butter, and vanilla. Blend until smooth. It should be the consistency of a thick smoothie.
  2. To assemble, layer the chocolate mixture and the remaining 1/4 cup peanut butter evenly among 6 popsicle molds. Sprinkle the granola over the tops of the fudgsicles, pressing down lightly, and then insert popsicle sticks. Freeze until firm (about 3 hours).
