Mushroom & Spinach Oatmeal

Looking for a savoury breakfast option? Elizabeth Emery from Vancouver with Love created this hearty oatmeal dish which is sure to help you take your oatmeal to another level.

  • 1 tsp olive oil
  • 1 cup mixed mushrooms, chopped finely (cremini, oyster)
  • 1 clove garlic, minced
  • ½ packed cup spinach
  • 2 sachets Nature’s Path Superseeds & Grains Oatmeal
  • 1 cup vegetable stock (boiling)
  • ½ tsp dried thyme
  • sea salt & black pepper
  • 3 tbsp toasted walnut pieces


    1. In a skillet, heat the olive oil on medium heat and add the mushrooms and garlic. Sauté for 3 minutes until mushrooms are softened. Add salt to taste.
    2. Add the spinach and sauté for a further 2 minutes until wilted. Remove from heat.
    3. Pour oatmeal sachets into a bowl and stir in vegetable stock and thyme. Stir and set aside.
    4. Season the oatmeal to taste with salt and pepper.
    5. Add the spinach/mushroom mixture to the oatmeal bowl and top with toasted walnuts for a nourishing meal.
