In a food processor, process cashews on high until finely ground. Pour cashews into a bowl.
To the food processor, add pitted dates, coconut oil, and vanilla. Process on high until dates form a ball and then disperse evenly. Scrape the sides and add cashews, cranberries, and lemon zest. Process on high until a ball begins to form. (If the mixture appears dry add a splash of lemon juice and process again.) Add the Crispy Rice Cereal and pulse to mix while leaving plenty of cereal intact.
