• 1 cup (250ml) raw cashews
  • 1 cup (250ml) packed, of soft pitted dates
  • ½ tbsp (7 ½ml) melted coconut oil
  • ¼ tsp (1 ¼ml) vanilla
  • 2 tbsp (30ml) dried cranberries
  • 1 tbsp (15ml) lemon zest (juice reserved)
  • 2 cup (250ml) Crispy Rice Cereal
  • ½ cup (125ml) medium shredded coconut


  1. In a food processor, process cashews on high until finely ground. Pour cashews into a bowl.
  2. To the food processor, add pitted dates, coconut oil, and vanilla. Process on high until dates form a ball and then disperse evenly. Scrape the sides and add cashews, cranberries, and lemon zest. Process on high until a ball begins to form. (If the mixture appears dry add a splash of lemon juice and process again.) Add the Crispy Rice Cereal and pulse to mix while leaving plenty of cereal intact.
  3. Form mixture into balls and roll in coconut.
