Koala Crisp Mini Cupcakes

These adorable little cupcakes brighten up lunchtimes, break times or any time you deserve a treat. They’re great for party snacks, though you’ll need to make plenty as they go fast!

Ingredients:

Cake:

Icing:

  • 3 oz cream cheese, softened
  • 1 tbsp butter, softened
  • ¾ cup icing sugar
  • 4 tsp cocoa powder
  • 4 strawberries, sliced

Directions:

Cupcakes:

  1. Grease a mini-muffin pan; set aside. In saucepan set over medium heat, bring butter, honey and brown rice syrup to boil.
  2. Boil for about 1 minute or until mixture is well combined and slightly thickened.
  3. Remove from heat.
  4. Stir in vanilla and cereal.
  5. Divide evenly and press into 18 mini-muffin cups.
  6. Cool completely.
  7. Remove from pan.

Icing:

  1. Meanwhile, in a bowl, beat cream cheese and butter together until well combined.
  2. Gradually beat in icing sugar and cocoa until smooth.
  3. Transfer icing to a piping bag fitted with a star tip.
  4. Pipe a swirl of icing onto each cupcake.
  5. Garnish with a strawberry slice.
