Grilled Corn Crostini

In just 20 minutes, you can start sharing these warm, zesty bites. Complete with a little spice and grilled corn, they’ll be a great start to a meal or as a sharing plate with your friends.

  • ¼ cup oil
  • 2 tbsp lime juice
  • 2 tsp lime zest
  • 2 tsp ground cumin
  • 1 tsp each salt and pepper
  • 6 corn cobs
  • 1 cup seeded and diced tomatoes
  • 2 jalapenos, seeded and diced
  • ½ cup finely chopped red onion
  • ½ cup chopped cilantro


  1. Whisk oil with lime juice, lime zest, cumin, salt and pepper. Brush over corn. Grill corn, basting often, for 10 minutes or until tender. Cool completely.
  2. Cut kernels from cobs and toss with tomato, jalapeno, onion and cilantro. Adjust seasoning to taste. Arrange chips on a platter and top with a small spoonful of the corn mixture.
