Fruity Yogurt Pizza

With whole grain EnviroKidz Koala Crisp cereal, yogurt and fruit, this take on pizza is appropriate for a fresh n’ fun breakfast or sweet treat for dessert. Use your favourite fruits and finish with some maple-nut butter drizzle

Ingredients

Pizza Crust:

Topping:

  • Greek yogurt (plain or sweetened with honey)
  • Sliced fruit of your choice (we used strawberry, blueberry and banana)

Maple-Nut Butter Drizzle:

  • 1/2 cup maple syrup
  • 1/4 cup smooth, organic peanut or almond butter

Directions

  1. Pre-heat oven to 350. While oven heats up – prep the Maple-Nut Butter Drizzle by heating maple syrup and nut butter in a pan over the stove. Stir constantly with a spatula until the mixture is smooth. Remove from heat and set aside.
  2. Combine the pizza crust ingredients in a large bowl and then press into a greased (with coconut oil) round baking dish and bake for 5 - 10 minutes.
  3. Remove from oven to cool and once the “crust” has reach room temperature, and just before serving - spread the greek yogurt over the top and follow with fruit slices. Lastly add the Maple-Nut Butter Drizzle.
