Dark Chocolate Macaroon Chia Seed Parfait

This nutritious, chocolatey breakfast parfait gets a healthy boost of fiber, omega fatty acids, and protein thanks to the layer of chocolate chia seed pudding. Layers of sliced banana, dairy-free granola, and Love Crunch Dark Chocolate Macaroon granola make for a parfait that’s almost too pretty to eat.

  • ½ cup Love Crunch Dark Chocolate Macaroon granola (plus more for topping)
  • ¼ cup plain dairy-free yogurt
  • 1 ripe banana, sliced

Chocolate Chia Seed Pudding

  • 2 tbsp chia seeds
  • ½ cup non-dairy milk
  • 1 tbsp maple syrup
  • 1 tbsp cacao powder
  • Pinch salt


  1. Prepare Chocolate Chia Seed Pudding: Combine all ingredients in a jar and close tightly with a lid. Shake until there are no chia seed lumps. Refrigerate overnight.
  2. In the morning, begin assembling your parfait by layering the ingredients into a jar. Start with the non-dairy yogurt, followed by 1/2 of the banana slices, 1/2 cupLove Crunch Dark Chocolate Macaroon granola, remaining banana slices, and the Chocolate Chia Seed Pudding. Top parfait with an extra sprinkle of Love Crunch Dark Chocolate Macaroon granola.

Note: To prepare parfait ahead of time, layer the dairy-free yogurt, bananas and chocolate chia seed pudding into a jar. Store granola in a separate container. Top parfait with granola just prior to eating.
