Preheat your oven to 350° F. Grease a 2-quart or 11″ x 7″ baking dish.
In a small bowl, combine the coconut oil, maple syrup and vanilla.
In a larger bowl, combine the flour, baking soda, and 1 1/2 cups oats. Add the coconut oil mixture and stir to combine. Spread 2/3 of this mixture in a greased baking dish. Spread the jam in an even layer over top.
Take the last third of the oat mixture, and add another 1/2 cup of oats and mix to combine. Sprinkle over the top of the jam layer, and bake for 30-35 minutes until set and turning golden. Add the 1/2 cup of Jungle Munch Cereal immediately, and carefully press down to set it in the mixture.
Let cool, then refrigerate for 30 minutes. Serve when firm.
