Tea Party Desserts

Directions:

Chickpea Salad Tea Sandwiches:

  1. Mash chickpeas with vegan mayo, nutritional yeast, pickle juice and salt. (Use a food processor to mash ingredients faster.)
  2. Mix in green onion, fresh dill, dill pickle. Stir to combine.
  3. To assemble 1 sandwich: Use ⅓ cup of chickpea salad per sandwich. Divide the salad between both slices of bread, this will keep the sandwiches intact. Avoid spreading the chickpea salad all the way to the edges of the bread. This will reduce waste once you’ve cut the crusts off.  Spread both slices of bread with filling to help keep the sandwich together once they’re prepared.
  4. Top one slice of the bread with green leaf lettuce and close up the sandwich. Slice off the crusts and cut each sandwich into 3 rectangles. Freshly baked in-store bread tends to get squished and is too soft to slice easily.
  5. Repeat steps 4-5 for the remaining sandwiches. 1 batch of chickpea salad makes enough for 3 sandwiches (6-9 tea sandwiches.)

Strawberry & Almond Butter Tea Sandwiches:

  1. To prepare 1 sandwich: spread both slices of bread with 1 tbsp of almond butter each. Avoid the edges of the bread to reduce waste once you’ve cut the crusts off.
  2. Arrange strawberry slices on one slice of bread. Optional: Drizzle strawberries with maple syrup for extra sweetness.
  3. Close up the sandwich, cut off the crusts and cut into 3 rectangles.
  4. Repeat steps 1-3 for remaining sandwiches. This recipe makes enough for 3 sandwiches (6-9 tea sandwiches.)

Sweet & Creamy Golden Tea:

  1. Place 3 decaffeinated black tea bags into a teapot. Cover with boiling water. Steep for 5 minutes.
  2. Remove tea bags.
  3. Stir in maple syrup and unsweetened soy milk.

Tea party Set Up:

  1. Arrange tea sandwiches on a platter, alternating between sweet and savory.
  2. On a dessert platter, arrange bite-sized pieces of Envirokidz granola bars and Sunrise Breakfast Biscuits. Place washed strawberries in a bowl.
  3. If necessary, allow time for tea to cool to an appropriate temperature for kids to enjoy.
