Ginger Zing Pear Crisp

Butter for greasing pan
4 ripe Bartlett pears (about 4 lbs.), cored and sliced
1 pouch Nature's Path® Hemp Plus Instant Oatmeal
2 tbs. brown sugar
3 tbs. freshly squeezed lemon juice
2 tsp. lemon zest
For the crisp topping
1 1/2 c. Nature's Path® Ginger Zing Granola
1/3 c. whole wheat pastry flour
1/4 c. packed brown sugar
1/8 tsp. sea salt
5 tbs. melted unsalted butter
Ice cream or sorbet, for serving

  1. Set oven rack in bottom third or oven. Preheat oven to 375°F. Butter an 8-inch square baking pan or 6 individual ovenproof ramekins.

  2. In a bowl, toss together pear slices, oatmeal cereal, brown sugar, lemon juice, and zest. Transfer to baking pan(s). Cover tightly with aluminum foil and bake for 20 minutes.

  3. While pears are baking, combine granola, flour, sugar, and salt. Pour in butter while stirring. Continue stirring until ingredients are coated with butter.

  4. After pears have baked for 20 minutes, remove foil. Distribute crust topping over pears. Continue baking, uncovered, until fruit is easily pierced with a fork and topping is crisp and lightly browned, about 15 minutes longer.

  5. Serve warm in bowls. Set a dollop of cinnamon ice cream or coconut sorbet on top, if you wish.
